I just made this today...yummy! The whole family will love it!

Stir fried chicken with peppers and broccoli.
Sliced onion
1 tsp olive oil
1/4 cup chicken broth (from carton, low sodium)
1/2 cup salsasliced chicken breasts (x2)
Sliced red peppers
1/2 head of chopped broccoli
salt and pepper

I sautéed the onion in olive oil, then added sliced chicken until just browned, then added peppers, brocoli, chicken broth and salsa. I let it simmer until juices are gone and meat is cooked. You can eat this in a whole wheat wrap with shredded low fat cheese and it makes an awesome lunch or light dinner. Or serve it on brown rice for dinner. I'm actually going to triple this next time and have enough for a couple days.

Opening SOON!

I'm so excited to share with you the news about my new studio opening April 2009. I will be teaming up with a naturopath, a chiropractor, and other healthcare providers in a new southend location. The construction is underway to provide people with a variety of health benefits. My studio will provide personal training services for individuals looking to achieve there own personal goals. Athletes, new moms, men, ladies, and teenagers alike are all welcome to train in a private setting where results will be reality. Several exciting workouts will be designed to suit your needs. You will have the benefit of working towards your goal one on one with me and learning ways to become healthier and more educated to create your best body ever! Nutrition services come with every training session as an important, if not most important, part in getting and staying healthy! Nutrition Tip that I follow...

Having more meals frequently will keep your metabolism at a high level thoughout the day. This does not mean to have 6 large meals, rather to split up your small ones. This is a great way to cut down on unwanted bodyfat. Keeping track of your meals will make you more aware of what you are eating and how many calories you are digesting.

Protein Pancakes

1 scoop protein power ( I use pro peptide)
1/2 cup old fashion oats
1tsp baking powder
1tsp Cinnamon
6 egg whites or as much as you need to achieve a smooth consistency

Mix well. Use PAM to grease the fry pan. This makes about 2 large pancakes or 3 medium sized ones. You can use E.D. Smith syrup which doesn't have any added sugar or applesauce is also good on them.

Ground Turkey Sauce

Ground Turkey Sauce

This is a comforting winter food that tastes great over spaghetti squash or eaten just on its own. I use fresh herbs and homemade tomato sauce but canned is good too.

1 lb ground turkey
1 med. onion chopped
1 clove garlic chopped
2 stalks of celery chopped
1 small carrot grated
1 green pepper diced
2 cups baby spinach
1 cup of roasted red pepper puree
1 can of tomato sauce
2 tbsp fresh chopped basil
1 tbsp fresh chopped rosemary
1 tbsp olive oil

Saute onion, garlic until tender. Add remaining veggies and saute 10 minutes. Add ground turkey and cook till done. Add fresh herbs, pepper puree and tomatoes. Let simmer for 30 minutes. Use instead of traditional spaghetti sauce or you can eat it on its own. Great for freezing.

I am very excited to share with you my new business. Freestyle Fitness is a personal health coaching service that I am offering to people in the convenience of their home. You don't have to me a gym member to become fit and healthy. I have learned from the best how to become lean and muscular without having to spend more than 45 minutes a day in the gym, and now I want to provide this knowledge to everyone! Fitness has always been my passion but until I decided to train for my first figure competition I didn't realize how much we could really transform our bodies. With the right motivation and knowledge we can do anything. I am so passionate about being healthy that I want to help anyone who would like to regain energy, lose weight and increase self confidence. It really doesn't take much more than 45 minutes 3-4 times per week and some motivation. The energy and self confidence that you gain from taking care of your health becomes an influence on those around you and begins to encourage them as well. Next thing you know, you have helped someone else get healthy along the way. What better feeling do we get than helping those we care for.
