Ground Turkey Sauce
This is a comforting winter food that tastes great over spaghetti squash or eaten just on its own. I use fresh herbs and homemade tomato sauce but canned is good too.
1 lb ground turkey
1 med. onion chopped
1 clove garlic chopped
2 stalks of celery chopped
1 small carrot grated
1 green pepper diced
2 cups baby spinach
1 cup of roasted red pepper puree
1 can of tomato sauce
2 tbsp fresh chopped basil
1 tbsp fresh chopped rosemary
1 tbsp olive oil
Saute onion, garlic until tender. Add remaining veggies and saute 10 minutes. Add ground turkey and cook till done. Add fresh herbs, pepper puree and tomatoes. Let simmer for 30 minutes. Use instead of traditional spaghetti sauce or you can eat it on its own. Great for freezing.
